Mascarpone Cheesecake: Saucing a Masterpiece with Chef Turok

Cheesecake⁠—it's rich, it's comforting, it's decadent, and in the hands of Brian Menendez, aka Chef Turok, it's a masterpiece! On Sunday, August 25, at LA's Pacific Food & Beverage Museum, join Chef Turok, master of the mascarpone cheesecake, for a demonstration and tasting of his signature work. Employing a fair measure of molecular gastronomy, plus fresh fruit from Melissa's Produce, Brian will show guests how to make several of his iconic sauces: Red Berry Gelée, Sangria Gelée, and Blackberry Espuma.

Brian Menendez, aka Chef Turok, created his signature Mascarpone Cheesecake recipe after being inspire by his Chef Instructor at Le Cordon Bleu, from which he graduated with honors in 2008. From there, he went on to work with some of LA's greatest chefs and best restaurants, including Providence, Joe's Restaurant on Abbot Kinney, Hatfield's, Holbox, Monsieur Marcel, CASA, and Savore Catering. He also did stints with Spago and Wolfgang Puck Catering.

He began by making his cheesecakes for friends and family visiting Los Angeles from out of town, and in 2015, he made his first deal to start selling them through Primera Taza Coffee House in Boyle Heights. From there, he went on to add many important chefs and restaurants to a clientele list that now includes Tlayuda LA, Gilberto Cetina Jr. (Holbox and Chicken Itza), Chefs Jaime & Ramiro (Mexicano and La Casita Mexicana), Raul Ortega (Mariscos Jalisco), Billy Acosta (Carnitas El Momo), Balam Mexican Kitchen, King & Queen Cantina (San Diego), Tempo Urban Kitchen, Colorado Kitchen (Santa Monica), Nick & Stef's Steakhouse (DTLA), and El Paisa (Long Beach). Chef Turok also regularly appears at food festivals, and his cheesecakes are a staple at a multitude of celebrity and award show gifting lounges.
