Kosher, or Kashrut, is a dietary code followed by Jews around the world. But it's also the foundation of a rich, diverse, and vibrant culinary tradition. Oh, and it's delicious, too! On Monday, April 15, join the Pacific Food & Beverage Museum (PacFAB) at LA's critically-acclaimed Harissa Restaurant for a Passover-style feast prepared by Chef Alain Cohen, the Tunisia-born and Paris-raised owner of Harissa. The menu features classic Pesach dishes drawn from both the Sephardic and Ashkenazic traditions, plus a traditional Seder plate, all paired with a selection of premium kosher wines and whiskeys.

Dinner is $85 for all National Food & Beverage Foundation (NatFAB), hospitality industry, Culinary Historians of Southern California, and SoCal wine and spirits club members, or $95 for non-members, and includes tax and gratuity. Space is strictly limited, and reservations are required. NatFAB membership is available to all at natfab.org/membership.

ABOUT THE CHEF
Born in Tunisia and raised in Paris, Alain Cohen worked in his father’s kosher Tunisian restaurant, Les Ailes (The Wings) from the age of nine. Success as an innovator came early to him when, as a teenager, Cohen introduced a French-Tunisian fusion menu that turned Les Ailes into an overnight sensation. The grillades section of Harissa's menu marks the refined Parisian dishes that helped make Les Ailes into a Paris landmark.

Cohen's next-door deli Got Kosher? has served his renowned pretzel and flavored challahs for nearly a decade. He is the creative force behind the hefty, made-to-order gourmet sandwiches, all made with with authentic ingredients and inspired by his stint with Nancy Silverton at La Brea Bakery.
Harissa, in its original and purest form, is a red pepper sauce made from red chili peppers, garlic, and salt. It is flavored with coriander, cumin, and caraway, and is combined with tomatoes in the cooking. According to Bon Appétit, "Cohen’s family-recipe harissa is the standard by which all other blends are measured." The emphasis is on balance rather than spiciness.
