About the Chef
Arthur Kurtzman is a knife care expert local to the New Orleans area. He has been sharpening kitchen knives for 5 years, learning the trade from Chef Joseph Klug at the Culinary Institute of America in Hyde Park, New York. There he earned his Associates Degree in Culinary Arts along with a Bachelor's Degree in Hospitality Management.
Arthur has worked in the restaurant industry for 8 years cooking in such kitchens as Shaya, Commander's Palace, Maggiano's Little Italy, and Bull and Buddha. He has also worked with Chef Paul Sturkey as a restaurant consultant in Cincinnati (his hometown). When your tool works right it makes your job easier, faster, and more enjoyable. This is true of any job and while working in New Orleans kitchens he noticed how many cooks used blunt knives.
He now uses his knowledge of kitchens and his talent in sharpening to create the most efficient way for locals and local restaurants to keep their equipment in top shape. His devotion to blades makes sure every knife doesn't leave his hands until they meet his exacting standards for sharpness and finish quality.
